Another rainy day here in Virginia. This is the third rainy day and I am getting a little sick of the headaches that usually accompany this sort of weather! Nevertheless, I am doing my best to catch up on all the posts I've started but haven't finished.
This one is for waffles. I found a really simple recipe that can easily be made in the blender (or by hand, with lots of stirring) that is also easily customizable. You can do these whole-grain, with or without fruit, and you can probably make them vegan, though I haven't tested that one out yet.
To make my version, you will need:
1-3/4 cup soymilk (regular milk is fine)
2 eggs
1/2 cup oil (I think I used 1/3 cup, but you don't want to go too low or you'll need to grease your waffle iron)
2 cups flour
4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla
Preheat your waffle iron. I have an electric so I can only speak for that!
Place all ingredients in a blender, liquid first and dry on top. Blend till completely smooth.
Spoon a scant 1/3 cup batter into each section of your iron. Mine has two square sections. If you have one of the large round ones, you may need to adjust the amount of batter.
Close lid and cook 3 to 3-1/2 minutes or until cooked through and starting to turn golden. Remove with a fork or tongs and place on a cooling rack or a plate.
