Guacamole

Here is the US, Mexican restaurants are everywhere!  I daresay there are very few towns without one.  Our local Mexican restaurant is called La Carreta and it was there that I fell in love with guacamole.  It's not only a tasty dip for all those complimentary tortilla chips, but it is also a very healthy snack.   

I  have tried a few recipes and finally settled on one I like.  I can't seem to find the recipe anymore online, but I will post the link if I ever find it again.  This one can be made by hand or in a blender.  I chose to do it by hand this time because my ingredients were at the absolute perfect ripeness.

To make this you will need:

2 ripe avocados (slightly squishy, but not mush; you don't want it to be gray on the inside)
1 small ripe tomato, peeled and diced
1/2 tsp onion powder (you can also use 1/2 cup fresh diced onions; I don't like crunchy onions)
1/2 tsp salt
1/2 tsp pepper
1/2 tsp chili powder
1 tbsp lime juice (lemon juice is OK too, but lime is more authentic)

Peel and pit the avocados.  If you've never done this before, here's how.  Place in a medium mixing bowl and mash with a fork.  Add the tomato, seasonings, and lime juice and continue to mash till you get the consistency you want.  I personally like mine really mashed, but someone else may like theirs chunkier.


This goes great in a fajita, a taco salad, or just by itself with some chips!
